We’d all love to give up refined sugar. We all know it’s bad for us. But the problem is that it’s really hard to stop a bad habit without replacing it with a better one.
What we need is a repertoire of healthy snack options that still taste sweet but don’t sour our conscience!
And if it still involves chocolate, well then – sign me up!
This recipe for chocolate energy balls is refined-sugar-free, dairy-free, vegan and gluten-free. Just to cover all bases
It’s really simple to make. You just need a food processor.
So without further ado, here’s the recipe:
Chocolate Energy Protein Balls
Equipment
- food processor
Ingredients
- 1 cup dates
- 1 cup cashews
- 1/2 cup pecans
- 1/4 cup cacao powder
- 1/3 cup oats
- 2 tbsp cranberries
- 4-6 tbsp desiccated coconut / coconut flakes
Instructions
- Soak the dates in boiling water for 5 minutes to soften them.
- Grind up the cashews and pecans in a food processor.
- Add the cacao powder and oats to the food processor and mix.
- Drain the dates of as much of the water as possible and add them and the cranberries to the food processor. Mix well.
- If the mixture is too dry and not sticking together, add a little water.
- Sprinkle some coconut flakes onto a large plate. Spoon out 1-2 tbsp of the mixture at a time and roll into balls, rolling in the coconut flakes until well covered.
- Place the balls on a baking tray and place in the freezer for 15 mins to set.
- Store in an airtight container in the fridge for up to a week.
