Soak the dates in boiling water for 5 minutes to soften them.
Grind up the cashews and pecans in a food processor.
Add the cacao powder and oats to the food processor and mix.
Drain the dates of as much of the water as possible and add them and the cranberries to the food processor. Mix well.
If the mixture is too dry and not sticking together, add a little water.
Sprinkle some coconut flakes onto a large plate. Spoon out 1-2 tbsp of the mixture at a time and roll into balls, rolling in the coconut flakes until well covered.
Place the balls on a baking tray and place in the freezer for 15 mins to set.
Store in an airtight container in the fridge for up to a week.
