Chocolate Energy Protein Balls

Ingredients
  

  • 1 cup dates
  • 1 cup cashews
  • 1/2 cup pecans
  • 1/4 cup cacao powder
  • 1/3 cup oats
  • 2 tbsp cranberries
  • 4-6 tbsp desiccated coconut / coconut flakes

Instructions
 

  • Soak the dates in boiling water for 5 minutes to soften them.
  • Grind up the cashews and pecans in a food processor.
  • Add the cacao powder and oats to the food processor and mix.
  • Drain the dates of as much of the water as possible and add them and the cranberries to the food processor. Mix well.
  • If the mixture is too dry and not sticking together, add a little water.
  • Sprinkle some coconut flakes onto a large plate. Spoon out 1-2 tbsp of the mixture at a time and roll into balls, rolling in the coconut flakes until well covered.
  • Place the balls on a baking tray and place in the freezer for 15 mins to set.
  • Store in an airtight container in the fridge for up to a week.
