Melt the coconut oil in a glass or pyrex bowl, either in a bain marie or in the microwave. Remove from the heat.
Add the rest of the ingredients and stir until well combined.
Pour the mixture into a small, freezer-proof container.
Smooth down the top with the back of a spoon and place the container in the freezer for 15 minutes.
Remove briefly to cut into 18-20 squares and then return to the freezer to continue setting for at least a further 45 minutes.
When ready, serve and eat, being careful not to leave them out too long at room temperatur or else the squares will start to melt and become a little gooey.
Keep uneaten squares (hah – who am I kidding?) in the freezer for up to 2 weeks.
