Chocolate Peanut Butter Fudge Squares

Servings: 20 squares

Ingredients
  

  • 3 tbsp coconut oil (extra virgin)
  • 270 g peanut butter - crunchy or smooth (or 1 Cup)
  • 5 tbsp maple syrup (pure, good quality)
  • 2 tbsp cacao powder

Method
 

  1. Melt the coconut oil in a glass or pyrex bowl, either in a bain marie or in the microwave. Remove from the heat.
  2. Add the rest of the ingredients and stir until well combined.
  3. Pour the mixture into a small, freezer-proof container.
  4. Smooth down the top with the back of a spoon and place the container in the freezer for 15 minutes.
  5. Remove briefly to cut into 18-20 squares and then return to the freezer to continue setting for at least a further 45 minutes.
  6. When ready, serve and eat, being careful not to leave them out too long at room temperatur or else the squares will start to melt and become a little gooey.
  7. Keep uneaten squares (hah – who am I kidding?) in the freezer for up to 2 weeks.
